Screenshot that image, put it in Photoshop and build your template right on top of it

All you need then is to copy the rectangles and where the font is then, I would suggest, dropping every single logo of conference opponents in where the logos go, name the layers and copy all of the logos to the other side, then turn off the visibility until you need that logo

i just dont want something thats going to take me an hour for every game so if there was a template that i could make quick changes on and go that would be good

Otherwise, that's just a big red rectangle with two smaller rectangles for the team colors and I guess a circle for the logo unless that's just a place holder

The most difficult part will be matching the fonts if you really want them

how hard would it be to make a template like that where i could just edit the specifics each week?
